Wilbur's Revenge, Pigheaded BBQ take top honors at state championship

May 22,2013

Middletown, Del. —
The 4th Annual Middletown BBQ Cook-off, which also serves as the state barbeque cook-off, took place last weekend at Frightland. Last year's event drew in more than 10,000 meat-lovers from all over the region anxious to compete in the state's only Kansas City BBQ Society-sanctioned competition. This year's cook-off, attended by almost 4,000 people, had to contend with dismal weather and several other local and regional events, including the Middletown High School and Appoquinimink High School graduations.
Despite the setbacks, though, more than 50 barbeque teams showed up Friday night to start grilling meats in four categories: chicken, ribs, pork and brisket. The competition also included two bonus categories: dessert and chef's choice.

BBQ Tour Stop #11: Wildwood, NJ

July 13, 2011

Christine and I drove back halfway across the country after Naperville and pulled into North Wildwood, NJ on the Thursday prior to the three day event. As we dropped our trailer on the street, the stage was already set up at one end of the street while the judges tent complete with air conditioning was at the other end.

One interesting thing that North Wildwood does is an Iron Chef contest where the secret ingredient is introduced on Friday night for Saturday turn-in and this year’s item was a frozen turkey. At awards on Sunday, Wilbur’s Revenge won with a nice turkey breast dish! David gave me all the ingredients and process and the judges agreed that it was fantastic!

Move over, meat: Think inside the box and use your grill for pizza, salads - even dessert

June 14, 2011
Courier Post Online

If your most adventurous grilling involved a fish fillet or meat-and-veggie skewer, it's time to take outdoor cooking in a new direction. Restaurant chefs and everyday cooks are making French toast, brie appetizers, wilted lettuce salads and mouthwatering desserts on their grates.

In addition to his role at Famous Dave's, he is the pitmaster for the competition barbecue crew Wilbur's Revenge. He said a big mistake amateurs make is to overlook the necessary cleaning of the grill.

BBQ Tour Stop #11: Wildwood, NJ

2010 NJ State BBQ Championship

Chris and I headed into North Wildwood, NJ for the 12th Annual NJ State BBQ Championship. This was the third year that the tour has been to this event so it was a familiar drive down the Atlantic City Expressway from Philadelphia. We stayed at the Harbor Light Inn again this year, which is about a block away from some of the best beaches in the U.S.

We always seem to meet new teams and this was no exception. David of Wilbur’s Revenge stopped by the trailer to sign up for the Kingsford Points Chase and we got to visiting. David is a franchisee of Famous Dave’s and is new to competition BBQ. We also ran into some old friends from the past, Mike from Mason Dixon Smokers, the Philly Pigs and, of course, the Stewed, Qued and Tattooed team was in attendance. Three years ago, there were less than 30 teams squeezed into an area the size of a basketball court and this year 67 teams battled it out in a parking lot which bordered the seawall and the beach!
